Eating starchy vegetables


Brooke, thank you for the suggestion to read Dr. Fung’s book, the Obesity Code. So much great information and scientific studies! Question, if you are insulin resistant or prediabetic, should you be eating starchy vegetables like sweet potatoes or winter squashes? They are listed in the Stop Overeating protocol, but Dr. Funk does not specifically mention them in the what to eat section. Other books on prediabetes say no to them and others say maybe a couple of times a week. They are full of fiber and good nutrients, so I am thinking a couple of times a week would be fine. Your thoughts?
