Exchanging Habits

I am used to eating a big and high carb breakfast at a café each morning since cafes have reopened in my city.
I gained 20 pounds doing that and I would like to implement a new lifestyle of intermittent fasting and have my first meal at Lunch.

Since my workday only starts around 9:30am, I thought this could be a great opportunity to exchange habits and take on some Pilates, Yoga or even a power walk instead.

I scheduled 3 Pilates classes on Friday, Sunday and Tuesday and attended only one of them.
I felt absolutely wonderful after the first class and the fact that I paid in advance, didn’t show up and lost this money didn’t stop my brain from seeing the “sitting at a café for breakfast” as more rewarding than the Pilates class.

In order to implement that and make it automatic, what would be the best way to approach it?

1) Work on believing that movement is more rewarding than the café’s breakfast?
2) Just do it, no matter if I feel like it or not and eventually it will become a habit?
3) Work on believing that café’s breakfast is ruining my life, thus making it unappealing?

Or maybe I am missing how to do it altogether…?
