How do I move pass a plateau in my weightloss?

Since October 21st I’ve only lost 1.7 lbs (not even two lbs). How can I move past this? Here’s what I’ve been doing.

1. I’m doing intermittent fasting from 8pm to noon
2. I usually eat:
8am: A coffee (no sugar, no cream, no nothing)
noon: A fruit (banana or raspberries) + 2tbs of peanut butter (only peanuts)
2:30pm: Salad (usually spinach, broccoli, kale) + chicken (or steak or 2 eggs) + 1/2 avocado + dressing (sugar free) (sometimes I’ll add a boiled potato or 2 tbps of rice)
7:30pm: dinner similar to lunch

I’m drinking 64oz+ of water every day
Sleeping 6 hours – 7 hours on average

I work out almost every day (I’ve done this for months and I love it for the mental and energy benefits, my workouts are 28 min of HIIT or a 50 min run).

I have one meal per week in which I allow myself to have a little joy food – usually french fries.

I’m paying attention to the hunger scale during my meals so I don’t overeat and I’d say 90% of the time I eat until 2 or 3.

It seems to me that I’m doing everything right, and yet seeing that I’ve only lost 1.7 lbs in 3 weeks is frustrating. Pls help!
