Thanks for answering my question behind the “why no nut flours?”. I appreciate that. Makes sense. Curious though. I had been looking into a keto way of eating long before I learned of SO. I see a lot of keto recipes with nut flours and I know a lot of people have lost weight on keto while still eating the nut flours. Would that be because they are typically counting carbs and keeping there carbs under 50 grams a day so that’s how it works for them? Conversely, SO doesn’t involve counting carbs (or anything) so while it may very well involve more carbs, it is specifically carbs that don’t raise the insulin response so that’s how we are able to get the awesome results (along with IF)?
