stop over eating time line

I have watched all of the over eating workshop, utilized the manual, listened to podcasts and I feel I am missing something. It seems that there is a beginning process or a stepwise process. Is it giving up flour and sugar only the first six weeks, then starting a protocol after six weeks. Does one keep the journal from day one? Or does everything start day one? No sugar/flour, fasting, journaling, all from day one.
