Stop overeating – flours question

Hello! I have a few questions on this protocol:

1. wondering why gluten free and almond/nut/bean flours are off limits or suggested to minimize for the protocol? Is it because they are processed and concentrated?

2. smoothies – if they have no fruit juices but are purely blended while fruits and vegetables, still not recommended?

3. healthy fats – I noticed in the workbook there are no recommended amounts – any reason? with such a concentrated amount of fat – is there no dopamine / insulin surge consuming those? Are nut butters ok?
