When do I start applying the food protocol and intermittent fasting?

Hi, I have just started the self coaching scholars this month and have decided to focus on the stope overeating workshop. I am wondering if I am supposed to just get going and stop eating flour and sugar and establish a protocol and intermittent fasting schedule? Or if I should work through the workshop materials first and then go back and start applying the things I’ve learned. My fear is that if I just dive in and try to stop eating sugar and flour that I will approach this with the same flawed diet mentality that I have unsuccessfully applied so many times in the past.
