Carbohydrate question

I’ve been eating Keto for the last couple months (before starting SCS) and have lost 20 pounds, but it feels very limiting to me and is not something I want to sustain for life.

Based on blood sugar tests, I am insulin resistant. I’d like to stop Keto and change my protocol and add in quinoa, oatmeal, sweet potatoes, potatoes, more vegetables, and occasionally fruit. Do you think this is a bad idea since I know I’m insulin resistant? I thought about limiting it to one serving of these per day, but do you think restrictions like that cause more desire? I think following the Ketogenic diet has made me afraid of carbs, even good ones.
